There is a philosophy at the heart of every dish we create.
We express that philosophy through the coined word "Kagabisai."

Ka (Fragrance): The natural aromas of seasonal ingredients and the inviting fragrance of freshly prepared dishes.
Ga (Elegance): The refined grace and sophistication unique to Japanese cuisine.
Bi (Beauty): Beauty that delights the eyes as much as the palate.
Sai (Color): The vibrant colors of ingredients that reflect the changing seasons.

Kagabisai is an original expression created by our chef. While inspired by the sound of Kaga, it is not an existing Japanese word.

Our wish is to bring the finest ingredients and local sake from Noto, Kanazawa, and the Hokuriku region to Ginza, and for every guest to leave feeling that every dish was memorable.
Guided by this philosophy, we continue to refine our craft each day in pursuit of an even finer dining experience.

The calligraphy of Kagabisai displayed in our restaurant was created by one of Japan's leading calligraphy masters.

The Owner

Owner-Chef Hiroto Furuta

Born in Tokyo on June 13, 1960.
After training at renowned Japanese restaurants in Ginza and Akasaka under masters of both the Kanto and Kansai traditions, he mastered the techniques and philosophy of Japanese cuisine.

In 1988, he became Executive Chef and General Manager of Jidaiya.

After marrying his wife, a native of Nanao City in Ishikawa Prefecture, in 1994, he visited Nanao for the first time and was deeply impressed by the exceptional freshness and flavor of its wild-caught seafood.

Inspired by the desire to serve Noto's outstanding seafood in Ginza at its peak freshness, he pioneered a same-day harvest and same-day air-delivery distribution system—an unprecedented challenge at the time.

Although many questioned the high transportation costs, he remained committed to quality, working closely with fishermen, market professionals, and logistics partners to establish a reliable supply chain.

In 1997, he opened Noto Hanto Jidaiya, creating a system that allowed wild fish landed at Nanao Fishing Port in the early morning to be served in Ginza that very day. The innovative route via Komatsu Airport and Haneda Airport attracted significant media attention.

Since the COVID-19 pandemic, ingredients have been delivered directly from Nanao Market by land transportation.

In 2015, the restaurant was awarded a Bib Gourmand in the Michelin Guide Tokyo. In the 2026 edition, it was selected as a Michelin Selected Restaurant, earning recognition as one of the few distinguished Japanese restaurants in Ginza.

On November 1, 2018, the restaurant was renamed Noto Kanazawa no Sachi Ginza Furuta to mark a new stage of its evolution.

While remaining faithful to the fundamentals of Japanese cuisine, he continues to create original dishes that celebrate the seasonal bounty of Kaga and Noto vegetables.
